I turned that option off five years ago and it has stayed off the whole time. However, having it on DOES make the boot go faster. Try it and see.
Stuff can get stuck in memory. Services and applications that run constantly can get memory leaks. Games can sometimes not quite totally unload. Personally, I think it's worth the extra few seconds to make sure everything is properly wiped. (I'll only unplug if a storm is coming, though. Or if I bump the mouse and the stupid thing starts glowing again - which it will do all night long unless I yank the plug.)
