Helpless freighter captain in No Man's Sky. He gives me command of his freighter (normally worth millions of units) for free, when I shoot down the ships attacking him.

Edwin Odesseiron, without a doubt. He's pretty much the template Bioware built all their sardonic, snarky villains-in-the-heroes-party characters, and with good reason!

The incident with him and the belt- along with the repeat of it after his not so grand encounter with Elminster- remain in mind to this day, as does his threatening to feed Khalid his boot in BG 1.

Woodie from Don't Starve. A Lumberjack whose axe talks to him and also turns into a Werebeaver if you cut down too many trees? Favorite by far!

My favorite character is Xan from Baldur's Gate 1, because of his super cool blue flaming sword.
And his dialogues. Oh god, his dialogues

Who else but Boo? No one goes for the eyes quite like the inimitable Boo. The race of Giant Space Hamsters (whether miniature or reglular giant) must be given its due!
(Also even though I never warmed up to Minsc in my party - he seems weirdly balanced at least in BG1 - I always put him in. For Boo!)
