That board will ^^. Do they have a 12700 / 12700F as an option? If so that would help for your choice of cpu cooler as those two cpu's use less power and create less heat than the 12700K / 12700KF.
They do have the 12700 for £40 less and they also have the 12600k for £110 less.
They have many selections of coolers too, I just don't know which to pick.

From that very quick research, my guess is they're legit.
Check local resources in Lancashire like newspaper, chamber of commerce, and also check companies office in London where they should be registered.
 
The specs I chose for the build were these, i didn't select a cooler though because I didn't know which to choose.

I got a total price of £1,559.95 which seems oddly low so I don't know if I did something wrong or there's something I'm missing with the build.

I really can't see any of the links you are posting because I'm not in the UK, but if you settle on a build and are under budget, as you are here, I would strongly recommend going with a larger SSD. That sort of depends on what kind of a gamer you are, but games are taking up more and more space these days, and I don't think that situation is going to improve.

Also, on the 3080 vs 3070, both are more than you need for 1080p gaming RIGHT NOW, but if you want to future proof yourself a bit, you can go as big as you can afford. I like to keep my PC's and components as long as possible.
