Hello, I would like to have the ''best'' specifications for a driving simulator without a budget limit but let it not be ''overkill''
I'm going to play games like: assetto corsa competizione, dirt rally, Forza Horizon 5
I already have a peripheral equipment:
Monitor: LG 34GL750-B Wheel: Logitech G920 Pedals: Fanatec Clubsport V3

Your monitor doesnt have the most demanding resolution and you could feasibly drop down to a 3070 or 3070Ti and save a little. The only problem I see with that is the 8GB of VRAM those cards come with may become a problem in a few years, especially if you upgraded the monitor.

Its also perfectly possible to come up with something a fair amount cheaper as well that would do a great job, but you said no budget without being overkill :)
