Overall performance is very similar. Depending how measured, both will come out on top by some measures.

The 7800 XT is newer, more efficient tech. Performance, as stated, is very similar to the 6800 XT, but done with less power consumption.

What is the price difference for the two GPUs you are considering?

well currently the ASRock Radeon RX 6800 XT Phantom Gaming is on sale for 680 Canadian dollars while the PowerColor Red Devil oc Radeon RX 7800 XT is for 750 Canadian dollars

What are the specs for the rest of your system (make/model of ALL installed components)? Especially need to determine if your PSU is sufficient to power either option and to assess any overall system imbalances.

Should be a nice build. I would lean toward the newer tech of the 7800 XT.
