Question New PC Build Advice (old PC 10 years old)

Hello, all! I am here today to ask for some advice on upgrading my PC. When at school, I was really into PC gaming and specs, although it seems like I have been out of the loop for a while. When I was last knowledgeable about this stuff, the GTX 1080ti was the top range GPU... how things seem to have changed!!

I have had the same PC for nearly the last decade with the following specs:
- CPU: 4th gen i5
- GPU: 1070ti
- RAM: 16GB DDR4

As I now finish university, I am looking to upgrade. The following criteria must be met in a PC:
- Ability to play games easily like Cities: Skylines 2, World of Warships, GTA6 (eventually!).
- Capable of editing videos with no latency.
- Longevity and futureproofed (able to last for the next 5-10 years).

So, what am I asking for? I am asking for some advice on what kinds of specs I should be looking for. What have I missed in the world of CPUs and GPUs over the last 10 years. How do the gens of intel processors differ, and how does the 20,30,40,50 series of Nvidias differ. What kinds of CPUs and GPUs in the Intel and Nvidia world should I be looking for?

I have found a PC for around £1200 on overclockers (are they still a good site to get your PCs from??) with the following specs:

- CPU: 12th gen i7
- GPU: RTX 5060ti
- RAM: 16gb DDR5

Does this look like decent specs for what I want?

Thank you in advance for any insight you can provide!
