FOV—Field of View, what do you recommend?

I've never bothered with FOV in games. But I've noticed choices offered in some games, and wonder are there any gotchas?

As I understand it, our eyes FOVs are ~180° horizontally and ~100° vertically. But games seem to offer only horizontal choice and then only around the 70°-120° range.

So, what's a gamer to do?

I must admit, I never change the FOV from a game's default settings. This leads to getting acclimated to how the game should look (to me), making experimental changes look "off".

120 FOV if you have a GPU that can handle it

I typically like 110 degrees horizontal. Its usually one of the first things I change, I find it difficult to play at low FoV, I feel tunnel-visioned and kinda have difficultly navigating the environment.
