Assuming you already have your hardware picked out that will be capable of supporting games at least at mid settings, I'm going to suggest a 3060 (or AMD equivalent) if you play at 1080. My son bought a pre-build budget machine with a 3060 last summer, and it still runs newer games fine/smoothly at 3840 x 1080 21:9 resolution in mid-settings and the defacto 60 fps. But if you plan to play at higher resolutions, I'd say at least a 3070. On high settings with no RT, I was still able to hit 80+ FPS on most games at 1440p (including Cyberpunk and Hogwarts Legacy), and the defacto 60 fps at 4k when I had my 3070 (again, that's without RT, and with a Ryzen 5 5600X cpu). So I would expect a budget build + 3070 should be able hit 60 fps on mid-settings at 1440, and even at 4k depending on the game. The only caveat is future proofing, if that concerns you, and 3000 series cards are a little long in the tooth with 5000 series looming.
