Compatibility video card AMD and Processor Intel

I've got a question if I buy an AMD video card (AMD Radeon RX 6700 XT) should I take an AMD Processor or it doesn't matter to have an Intel(I was planning to get an Intel core i5-12700k )

You can pair any brand part with another brand, so long as they are physically compatible(meaning the motherboard). You're going to be fine choosing any camp's processor to pair with that GPU.
